I'm wondering if extreme temperatures affects reliability and what handguns do you trust in serious heat without worrying about performance?

yeah, Tyler, extreme heat can affect reliability, but not usually dramatically for modern pistols. Heat can thin grease, soften cheap polymers and make primers a bit more sensitive. I trust Glock, SIG, H and K, and CZ family guns for hot days

How hot are we talking and do you mean reliability for everyday carry, competition use, or extended operations in desert conditions?

Hot temps mostly mess with your lube, causing it to dry out faster. Most quality modern polymer or metal guns, Glock, Sig P226, HK, M&P, are all military-tested and handle heat just fine. Just re-lube often
